When you click on the Databases button, and the option to remove the database is greyed-out, this most likely means the database is in use by a currently installed server application, such as OSCommerce.
In order to remove the MySQL database, you would first need to remove the application still making use of the database. Only remove the application if you are certain it is not being used by any other clients on the server.
